Delightful pink cookies filled with rich chocolate ganache, perfect for sharing on Valentine’s Day or any special occasion.
Ingredients
- ½ cup (113 g) unsalted butter, softened
- ½ cup (100 g) granulated sugar
- ½ cup (100 g) brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup (125 g) all-purpose flour
- ½ cup (45 g) unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon espresso powder (optional)

- 1½ cups (190 g) all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2–3 teaspoons freeze-dried raspberry powder or pink food coloring
- ½ cup (120 ml) heavy cream
- ¾ cup (130 g) dark or white chocolate chips, finely chopped
- 1 tablespoon (14 g) butter (optional)
- Freeze-dried raspberries (optional)
- Chocolate squares (optional)
- Heart sprinkles (optional)
- Melted white chocolate for drizzling (optional)
Instructions
- Cream softened butter with both sugars. Add the egg and vanilla extract, mixing until combined.
- For the chocolate dough, stir in flour, cocoa powder, baking soda, salt, and espresso powder. For the pink dough, mix flour, baking soda, salt, and raspberry powder or food coloring.
- Chill both doughs in the refrigerator for 30 minutes.
- Scoop the chilled dough into balls and press a well in the center of each ball.
- Bake cookies at 350°F (175°C) for 10–12 minutes, re-pressing the centers if needed after baking.
- Allow cookies to cool completely.
- Make ganache by pouring hot cream over chopped chocolate, stirring until smooth. Add butter for richness if desired.
- Fill the centers of the cooled cookies with ganache and decorate as desired.
- Let ganache set at room temperature or chill briefly before serving.
Notes
Make sure to soften the butter for easy mixing. Don’t skip chilling the dough to maintain cookie shape while baking.
