Description

Delicious and easy vegan heart-shaped sugar cookies perfect for Valentine’s Day, made with simple ingredients.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1 cup sugar
  • 1/4 cup almond milk (or other non-dairy milk)
  • 1 teaspoon vanilla extract
  • Heart-shaped cookie cutter
  • Confectioners’ sugar for dusting (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, baking powder, and salt.
  3. In another bowl, combine the melted coconut oil and sugar until smooth.
  4. Add the almond milk and vanilla extract to the oil and sugar mixture, and mix well.
  5. Gradually add the dry ingredients to the wet ingredients until a dough forms.
  6. Roll out the dough on a floured surface to about 1/4 inch thick.
  7. Use a heart-shaped cookie cutter to cut out cookies and place them on a baking sheet lined with parchment paper.
  8. Bake for 8-10 minutes or until the edges are slightly golden.
  9. Allow to cool before dusting with confectioners’ sugar if desired.

Notes

For chewier cookies, avoid overbaking. Store cookies in an airtight box to keep them fresh.
