Description

A rich chocolate roll cake that looks like a log, perfect for winter meals and small parties.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 cup chocolate buttercream frosting


Instructions

  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until light and fluffy.
  4. Gradually add in the oil and vanilla.
  5. Fold in the dry ingredients until combined.
  6. Spread the batter into the prepared pan and bake for about 15 minutes.
  7. Once cooled, invert onto a towel dusted with powdered sugar.
  8. Roll the sponge cake with the towel and let it cool completely.
  9. Meanwhile, whip heavy cream with powdered sugar until soft peaks form.
  10. Unroll the cake, spread whipped cream filling, and re-roll.
  11. Frost the outside with chocolate buttercream and decorate as desired.
  12. Refrigerate until ready to serve.

Notes

Use fresh eggs for the best rise. Chill the cake a bit before frosting to keep crumbs out.
