A bright and soft cake made with fresh orange juice and olive oil, perfect for snacking or gatherings.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup olive oil
- 3 large eggs
- 1 cup fresh orange juice
- Zest of 1 orange
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a Bundt pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, mix the sugar and olive oil until well combined. Add the eggs one at a time, mixing well after each addition.
- Stir in the orange juice and zest.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared Bundt pan and smooth the top.
- Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
Notes
Use fresh orange juice and zest for the best taste. Avoid overmixing the batter to maintain texture.
