Description

A bright and soft cake made with fresh orange juice and olive oil, perfect for snacking or gatherings.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup olive oil
  • 3 large eggs
  • 1 cup fresh orange juice
  • Zest of 1 orange
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a Bundt pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the sugar and olive oil until well combined. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the orange juice and zest.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared Bundt pan and smooth the top.
  7. Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

Notes

Use fresh orange juice and zest for the best taste. Avoid overmixing the batter to maintain texture.
